The Haggis Tour Edinburgh is great value for money as it’s essentially a 2-in-1 tour. We ate a ton of food, but Nyssa also told us about Edinburgh’s history. Of course she also talked about the food’s history, but it was nice to learn about the Old Town and all its buildings. She was very knowledgeable and friendly. Plus, the food was delicious, especially the fudge! I want to recreate it at home but who knows if I’ll get it that creamy. I always try to be too healthy when I cook LOL. I’m glad I ate haggis, though - I’ll never make that at home.
I have to admit I was a little wary of the haggis, but there’s absolutely no reason to be. It’s a very rich, meaty flavor, although slightlyyyy metallic. It’s kind of crumbly, and you can really taste the spices. I preferred it to the fish soup, and I thought it’d be the other way around. Our guide Nicola was also very calm and patient when reassuring other guests about the dish’s taste. The whisky single malt was delicious, and the perfect amount. Washes the food down well, but any more and I’d have been drunk.

DIG INTO SCOTLAND’S MOST TRADITIONAL DISHES
Your first stop is the iconic Cullen Skink. This dish comes from the Highlands, and is a thick soup of haddock, potatoes, and onions. It’s originally from the town of Cullen, hence the name, whereas ‘skink’ is a Scots word for soup. Next you’ll try Scotland’s national dish: haggis. This is a pudding made from sheep’s offal: heart, liver, and lungs. This is all mixed with oats, onions, suet, and spices, and then traditionally cooked in the animal’s stomach. You’ll also try ‘neeps and tatties’. Neeps are turnips, and tatties are potatoes. They’re boiled and mashed separately, served alongside the haggis.
INDULGE IN SWEET DESSERTS
There’s always room for dessert! After the main meal comes cranachan - a whisky-infused traditional Scottish sweet. Usually served in a tall glass, layers of cream and raspberries are bolstered by oats and whisky. This dessert was typically served to celebrate the raspberry harvest in August. Our other sweet offering is homemade fudge. These are creamy blocks made out of condensed milk, sugar, and butter or cream. Although simple, it’s a much-loved recipe in Scotland and is often served for celebrations. Vanilla is definitely the most common flavor.

At the end of the tour, we’ll serve up a final unique meal: our Secret Dish! We won’t reveal what it is just yet - you’ll have to join us to find out - but we can guarantee it’s delicious! You’ll also receive a ‘dram of liquid gold’. Or, in plain English, a glass of whisky! Scotland is famous for its whiskies, especially single malt whisky. As your guide will explain, this type is made from only malted barley and water and must be made in one distillery. They must be aged in oak casks for at least three years in Scotland. You’ll get two glasses of whisky - enjoy them!

Interesting facts about Haggis
- In 1787, Scotland's national poet Robert Burns wrote a poem called 'Address to the Haggis'. In the poem, he praised the dish and its taste. That's the main reason haggis is Scotland's national dish!
- Haggis can be adapted to be vegetarian. The sheep’s offal and suet are just swapped out for vegetables.
- Haggis was supposedly created by hunters to cook the offal immediately after the kill. Otherwise, the offal would spoil quickly. This way, they didn’t waste any animal parts. It was also easy to cook, as it was done directly in the animal’s stomach.
- Supposedly, the ancient Romans were the first to eat a dish similar to haggis.
